Butternut Squash Soup with Bacon Croutons, Quinoa Flake Crusted Salmon with Orange Balsamic Reduction, Chocolate Hazelnut Mousse Cups
Valentine’s day is coming up and it’s looking like another one where I’ll be far away from my love. That doesn’t mean I won’t be eating as if we were together, though. I’ll take any excuse for a fancy meal.
If you can’t get that coveted restaurant reservation, or if you just prefer low-key nights at home (this girl right here) then I highly recommend you make a homemade meal for you and your hunny.
Cheddar Cheese Bites: Two Ways, Vegetarian Curry Stew with Cashew Lime Quinoa, Mexican Lime Icebox Cake
To make things easier for you, I’ve created three meal pairings using 24 Carrot Life recipes. Most of these recipes are healthy, so you won’t feel stuffed and guilty after dinner like I so often do. Each meal has an appetizer, entree and dessert. Pairing #2 is vegetarian and pairing #3 is vegan and gluten free. These are some of my favorite recipes (and yours!) from the blog so I hope you enjoy.
Light some candles and cozy up to watch a movie afterwards or head out for a night on the town!
What are your plans for Valentine’s Day?

Mmm…delicious pairings – all 3 of them! We normally stay in for Valentine’s Day (hate the crowds at restaurants), but since this year it’s a Saturday we’re going to dinner w 2 other couples, though not specifically to celebrate V day! Happy valentine’s day!
