I am still trying to process the fact that a month ago I was living in Mexico. I am sure that as the years pass I’ll realize I learned more and different things than I think now, but it will take time to sufficiently reflect on my experience.
I have barely had a second to really think about it and I’m lucky enough to have Daniel coming to visit in about a week so Mexico is coming to me!
I can confidently say that I pushed my boundaries when it came to making Mexican food in my kitchen and I want to reflect on some of that food today. In January, I started a weekly series called Fiesta Fridays that lasted until the end of my time in Oaxaca. During the series, I took some of my favorite Mexican recipes and made them healthier (with the exception of a few that just had to stay decadent). I’m so glad I have this long list of recipes under my belt so I can make the food I miss the most now that I am back in Philadelphia.

My very first Fiesta Friday recipe was a simple one: Mexican Molletes. If you have no clue what these are then stop what you’re doing, read the recipe, and make those babies. I promise you will LOVE them! It’s a perfect go-to meal when you’re starving and have no idea what to make. You can use canned beans, your favorite salsa, whatever cheese you have on hand and you’ll have lunch or dinner in a flash! That easy.
