I have been feeling really behind on my blog posts and I hope to get into a better rhythm this week so I can stay on top of my posts. This past weekend, instead of making new recipes I tried out a couple from some of my favorite blogs. This is going to become a weekly post with recipes from other blogs that I have tried out with my notes for any changes or suggestions.
This weekend I made some delicious recipes that you absolutely HAVE to try out:
Vegan Carrot Coconut Pancakes by Minimalist Baker
-These were even better topped with some coconut butter and my Healthy Stovetop Granola.
Chocolate Cream Caramel Bars by This Rawsome Vegan Life
-I don’t think I can ever make these again because I just ate half the batch today alone. Ahh! In all seriousness though, I may try making my own version of these with oats instead of almonds in the crust and less coconut oil in the caramel layer. I used homemade peanut butter instead of cashew butter, added a pinch of salt to the crust, and added some vanilla extract to the caramel layer. So good!
Easy Flaked Almond “Tuna” Salad by Oh She Glows
-I would definitely recommend adding some parsley to this mixture. I didn’t have any regular or vegan mayonnaise so I made a vinaigrette using olive oil, apple cider vinegar, lime juice, salt, pepper, and a splash of almond coconut milk.
