On Sunday morning I woke up really hungry. As usual, I wanted something healthy and filling, but this time I didn’t have much patience to wait for something to cook. I had some yogurt and fresh fruit but no granola to be found. This stovetop granola is much quicker than using the oven and can be customized to include whatever seeds and nuts you like or have lying around. I threw in a little bit of pretty much everything I had. The recipe below is just a guideline. I only used a small amount of coconut oil and agave to keep this low in fat and sugar. Enjoy!
Healthy Stovetop Granola
Makes 1 ½ cups.
1 cup rolled oats, gluten free optional
2 tablespoons pumpkin seeds
1 tablespoon sesame seeds
3 tablespoons pecans, chopped
2 tablespoons unsweetened shredded coconut
3 tablespoons popped amaranth
1 tablespoon chia seeds
2 tablespoons coconut oil
1 tablespoon agave syrup
¼ tablespoon pure vanilla extract
¼ teaspoon salt
- Add all ingredients to a medium skillet and stir to coat evenly.
- Stir continuously on medium low heat for about 10-12 minutes, or until lightly browned.
- Set aside to cool completely. Store in an airtight container.
