June flew by and was a month filled with all kinds of emotions. I came home from Mexico, moved home (just for the month), started a new job (which was actually an old job because I worked at this company for five months last year before moving to Mexico), and signed a lease on my first big girl apartment. Then I started the mammoth task of moving in and furnishing my new place. Needless to say, I’ve been busy and lot’s has happened in June. I’m excited to start sleeping at my apartment in July and to continue making it look pretty. I will be sharing pictures soon!
As for July, I’ll be trying to get myself into a routine now that I’ll be living downtown and commuting to the suburbs for work. I’m headed to Miami with my family this weekend for the 4th and Daniel comes to visit at the end of July for three weeks so I am seriously looking forward to that!I only posted a few times in June, and only shared four new recipes. Out of those four, the Chilled Cucumber Soup was a fan favorite, followed closely by the Vegetarian Mushroom “Meatloaf” Cups (pictured above).
24 Carrot Life got some great press this month, which helped keep things going on the blog while I wasn’t posting as much as usual. This Healthy Reese’s Pretzel Protein Smoothie made a serious comeback thanks to Huffington Post, Buzzfeed Food featured the Mexican Lime Icebox Cake in a great icebox cake roundup for summer, and The Kitchn showcased my Funfetti Cake Batter Pancakes to show one of the many ways you can “bake” with whole wheat flour.
