I guess I can’t really say that today was a lazy Sunday since I went on a walk, worked out at the gym, and did some grocery shopping. I did, however, star the day by making a lazy breakfast and watching some tv. Poached eggs are a quick and healthy, yet elegant breakfast. Give them a try!
I also had to share some beautiful pictures I took yesterday. Although spring is definitely here, it has still been pretty cold. We have had a few days of warm weather but they haven’t lasted for long. The flowers are gorgeous though!
Easy Poached Eggs
Serves 1.
2 eggs
salt and pepper to tast
Boil water in a small pot. Once the water is boiling, reduce heat to low and crack eggs into the water (or you can crack them first into a bowl if you are worried about getting shells in the water). Cook eggs for about 3 minutes, depending on how you like your eggs. Drain and place on top of toast or enjoy plain. Top with salt and pepper.
