As someone who has to be at work by 9 am, I value my sleep. That means that I try to make healthy, protein packed breakfasts that don’t take too long to prepare. This simple breakfast quesadilla is one of those. It doesn’t require too many ingredients, and it takes only a few minutes to pull together.
What is your favorite quick breakfast?
Simple Breakfast Quesadilla
Serves 1.
1 large tortilla (I used whole wheat)
2 eggs
a few slices of cheese (I used cheddar)
salsa
salt and pepper, to tast
Whisk eggs in a small bowl, add salt and pepper, and scramble in a small to medium sized non-stick pan. Place eggs on one half of the tortilla and cover with slices of cheese. Fold tortilla, spray pan, and cook on both sides until browned and cheese is melted. Serve with salsa.
