This black bean dip may not look like much but it is a great way to change up the normal black beans you might eat as a side dish or add to a salad. This is great slathered on some chicken or eaten with some raw veggies. It has a nice kick to it from the lime and cayenne pepper.
Black Bean Dip
Makes 2 cups.
1 15 oz. can (1 ¾ cup) black beans
¼ white onion
1 garlic clove
2 tablespoons lime juice
½ teaspoon salt
¼ teaspoon cayenne pepper
1 tablespoon olive oil
4 tablespoons water
- Add all ingredients to a food processor and process until smooth, adding water one tablespoon at a time until mixture is creamy.
