One of my favorite things about living in Mexico is that I have access to all kinds of fruits that are ripe almost all year round. Papaya has got to be somewhere near the top of my list of favorite fruits. The other day I bought a pretty large papaya and it was all gone by the following day. I can’t get enough! I thought this take on the mango lassi would be a fun way to use some of my papaya. This lassi is not too sweet and really lets the papaya flavor shine through.
Papaya Lassi
Make 2 servings.
1 cup plain, non fat yogurt
1 cup fresh papaya, chopped
1-2 tablespoons honey
1/8 teaspoon cinnamon or cardamom
4-5 ice cubes
- Add all ingredients to a blender and blend until smooth. Add more ice to achieve desired consistency.
- Garnish with cinnamon or cardamom.
