Chicken Soba Noodles with Spicy Peanut Sauce
Serves 2.
2 bundles of soba noodles
½ cucumber, peeled and sliced into sticks
1 chicken breast, cooked the way you prefer
1 tablespoon peanut butter
2 tablespoons soy sauce
2 teaspoons rice wine vinegar
2 teaspoons almond milk (optional to make it slightly creamier)
juice of ½ lime
1/8 teaspoon cayenne pepper
pepper, to taste
a few sprigs fresh cilantro
sesame seeds
lime wedges
- Cook the soba noodles according to packages directions.
- Prepare the sauce by combining peanut butter, soy sauce, rice wine vinegar, almond milk, lime, cayenne pepper, and pepper.
- Combine soba noodles, cucumber, and chicken in a bowl. Cover with sauce and garnish with fresh cilantro, sesame seeds, and lime wedges.
- Store in an airtight container in the fridge for up to three days.

Lovely meal. Right amount of zing. I added some seared carrots, a small amount of spinach sautéed with garlic, and some raw scallions. The amount of dressing was just a bit too much, but I only cooked one bundle of soba noodles.

So glad you liked it, Jane! You could save the leftover dressing for lots of things: as a dip with raw veggies, with chicken satay, on salad, etc.
