I just got back from a week in San Francisco and I have a short week in Philly before I turn around and head back to San Diego for a week. And Daniel comes to visit in two weeks! A pretty good month if you ask me! With all this back and forth, I need easy to grab snacks that travel well.
A few days ago I walked into a Starbucks for coffee and a snack and grabbed a bar called That’s It. It is made with just dried fruit and is SO good. I was determined to make my own at home and found that it is just as easy as I thought. Just two ingredients and a food processor to make these delicious bars or bites. My kind of snack.
What I love most about this recipe is that you can change up the dried fruit to use whatever you like. I recommend keeping dried apple rings as the base since they have less moisture than other dried fruits and are a neutral flavor. I could see this recipe working great with dried mango, dried pineapple, dried figs, dates, and even raisins.
I’m determined to take some more pictures while I’m in San Diego than I took in San Francisco, although I did get a couple foodie pics in on Instagram. Follow along with me to see what I eat and see in San Diego!
- 2 cups chewy dried apple rings
- 1 cup dried tart cherries
- 2 cups chewy dried apple rings
- 1 cup dried apricot
- 1 teaspoon water, if needed
- Add the dried apple and cherries (or dried apple and apricot) to a food processor and process until the mixture sticks together and the dried fruit is in little pieces. If needed, add a little bit of water to make everything stick together. You shouldn't need more than 1 teaspoon.
- Either roll into bites or place the mixture between two pieces of wax paper and roll out with a rolling pin until it reaches desired thickness (I did about 1/4 inch thick) and cut into bars.

I am new-ish to your blog. You travel a lot! Do you talk about what you do for a living? It must be fascinating.
Regarding the recipe: Do you dry your own fruits? Any directions on how to go about doing that?

Hi Marsha- so glad you stopped by! I work at a non profit that has me traveling a lot. It can be fun but also tiring sometimes. I buy dried fruit at Trader Joe’s or in bulk from Whole Foods or Costco. I wish I could dry my own fruits though- that would be cool! I bet you could find directions online for cooking low and slow in the oven.

I’m so excited to find this recipe! I love That’s it bars but have been wishing to make my own. How long do theses generally keep for (assuming they last long enough for it to be an issue) and should they be refrigerated?

Yes! Those bars are soo good but you can save lots of money with these homemade ones 🙂 I think it would be best to keep them in an airtight container in the fridge and they should last a couple weeks that way!
