One of my favorite food groups here in Mexico are handmade tortillas. I usually end up eating a lot of handmade tortillas in one sitting because I can’t stop myself once I start. They are so worth it though.
There have been some beautiful mushrooms at the organic farmer’s market lately and I have now made these tacos two weeks in a row. They are simple enough to really let the mushrooms shine through, with just the addition of lots of garlic and scallions. Of course you could use less garlic, but I love how the garlic pairs with the earthy mushrooms.
Just top these tacos with salsa and lime juice and you are ready to go. A quick meal that is satisfying, healthy, and seasonal (depending on where you live I suppose).
Check out that beautiful stack of fresh, handmade corn tortillas from the market down the street! And aren’t the mushrooms just so elegant?
Wild Mushroom and Garlic Tacos
½ cup slices scallion
4 cloves garlic, sliced
1 tablespoon olive oil
4-6 cups wild mushrooms (I used golden needle mushrooms)
4 medium sized corn tortillas
red salsa, to garnish
scallion stalks, to garnish
- Add scallion, garlic and olive oil to a pan and heat on medium heat until the garlic and scallions start to brown.
- Reduce the heat to low and add the mushrooms. Cook for about 3 minutes or until mushrooms have warmed throughout and have started to wilt.
- Meanwhile, heat your tortillas on a heated pan, or in the microwave.
- Add ¼ of the mushroom mixture to the middle of each tortilla. Top with red salsa and more scallions.
- Serve with lime wedges.
In other fun news, I joined the Elf for Health challenge that is being hosted by Nutritionella and The Lean Green Bean. It is a four week challenge involving daily tasks, challenge winners, lots of support through Facebook and partner matches, as well as some cool prizes. Tomorrow if the first official day, and I will be doing my best to update on Instagram, Facebook, and twitter about my progress (look out for the hashtag #elf4health). I am hoping that this will help me stay on track with my fitness and clean eating goals until after Christmas and the New Year. If you haven’t signed up and want to, you can follow along with the challenges now and sign up for your own personal elf mentor for the last two weeks of the challenge.
