One of my favorite food groups here in Mexico are handmade tortillas. I usually end up eating a lot of handmade tortillas in one sitting because I can’t stop myself once I start. They are so worth it though.
There have been some beautiful mushrooms at the organic farmer’s market lately and I have now made these tacos two weeks in a row. They are simple enough to really let the mushrooms shine through, with just the addition of lots of garlic and scallions. Of course you could use less garlic, but I love how the garlic pairs with the earthy mushrooms.
Just top these tacos with salsa and lime juice and you are ready to go. A quick meal that is satisfying, healthy, and seasonal (depending on where you live I suppose).

Wild Mushroom and Garlic Tacos
Serves 2.
½ cup slices scallion
4 cloves garlic, sliced
1 tablespoon olive oil
4-6 cups wild mushrooms (I used golden needle mushrooms)
4 medium sized corn tortillas
red salsa, to garnish
scallion stalks, to garnish
- Add scallion, garlic and olive oil to a pan and heat on medium heat until the garlic and scallions start to brown.
- Reduce the heat to low and add the mushrooms. Cook for about 3 minutes or until mushrooms have warmed throughout and have started to wilt.
- Meanwhile, heat your tortillas on a heated pan, or in the microwave.
- Add ¼ of the mushroom mixture to the middle of each tortilla. Top with red salsa and more scallions.
- Serve with lime wedges.

When I say homemade I mean by the Mexican ladies at the market haha but I’ll have to give my own tortillas a try soon, especially for when I’m back in the U.S.!
