Breakfast is my all time favorite meal of the day. Even if I wake up really late and don’t eat until 1 pm- my first meal always has to be a breakfast food. One of my favorite breakfast foods is pancakes of any kind. These pancakes are slightly adapted from Minimalist Baker’s Chocolate Chip Oatmeal Cookie Pancakes. These pancakes are not fluffy like your average pancake. They are dense, filling and delicious!
Chocolate Chip Banana Oatmeal Pancakes
Makes 4 pancakes.
1 very ripe banana
1 teaspoon baking powder
1 tablespoon flax meal + 2 1/2 tablespoons water
pinch of salt
1/2 teaspoon vanilla extract
1 tablespoon peanut butter (or other nut butter)
1 tablespoon coconut oil (or other oil)
3 tablespoons almond milk (or other milk)
1/2 cup rolled oats
1/4 cup whole wheat pastry flour
chocolate chips, as many as you want!
Preheat a pan on medium to low heat and coat with coconut oil. Prepare flax egg by mixing flax meal and water. Set aside. Mash banana and baking powder together with a fork. Add flax egg, salt, vanilla extract, peanut butter, almond milk, and stir. Stir in oats and flour. Fold in chocolate chips.
Scoop batter onto pan and cook for about 4 minutes on each side or until brown and firm enough to flip. Serve with maple or agave syrup. Pancakes can be refrigerated for a few days and reheated.
