Another month has gone by and it’s scary to think that I only have one more month in Oaxaca before I head back to Philadelphia to start my job.
The Best of March post I did last month was a huge hit, mostly due to My Favorite Detox Drink recipe I shared. This recipe got lots of attention on Pinterest and with good reason- I pretty much can’t live without this drink since I started having it twice a day in February. It clear ups my skin, keeps my belly flat, and I’m sure it does lots of other things due to the magic powers of apple cider vinegar. I went without it during my trip the other week and I could definitely feel the difference.
So let’s review what I made this month first:I made another bunch of great recipes (I’m a bit biased) this month and covered breakfasts, drinks and smoothies, sides, and dessert. Time for another entree soon, me thinks!
This month I tested out posting about topics other than recipes. I announced that I was accepted as a #fitfluential Ambassador, shared some of my ups and downs of blogging, and did a recap of my trip to the Riviera Maya with Daniel. I’m hoping to do some more posts like this in the future so you all can get to know me a bit more! Hopefully you like them as much as I do.
The most popular recipe this month was the Vegan Banana Bread Ice Cream, followed very closely by the Birthday Cake Coconut Butter (shown at the top of the post). These are both going to be staples in my kitchen since they are so easy, tasty, and clean!
Just like last month, I thought it would be fun to bring back an old recipe that has been getting some love lately. I posted this recipe for Vanilla Overnight Oats VERRYY early in my blogging career and it has been one of the most popular recipes to date. I’ve had friends try it out and it always get rave reviews. There is just nothing better than waking up to a healthy and satisfying breakfast ready to eat.
As for May, I have LOTS of cooking to get done since I want to test a bunch of recipes and have them photographed so I’m not too stressed with the blog and my job when I move back to Philadelphia.
May will also be the last month of my Fiesta Fridays feature so get ready for some of my absolute favorite Mexican dishes made healthier (hint: one of them is a sweet dish with three kinds of milk).
