If you’re a regular around here, you may notice a new look for the blog, which happened this weekend. I took the plunge and finally got the Genesis Framework (<–Affiliate Link) and updated my theme (again). The look is overall much smoother and the recipe page is seriously improved (check it out by clicking on “Recipes” on the menu bar)! I’d love to hear your thoughts on it and any requests you have for making the site more navigable and user friendly. I still have a long list of things I want to improve, so you may continue to see some changes over the next week or two.
March is over (should we even talk about how fast time flies?), so it’s a new month, there’s a new look for the blog, and in celebration I’m starting a new monthly post called “Best Of”. I definitely can’t claim credit for this idea as some of my fav bloggers like Dana and John, Davida, and Lee do this each month. I loved the idea when I first saw it and have been wanting to start my own version ever since.
Let’s start with a recipe round-up of everything I made during March…
The most popular recipe this month was Salsa Verde Chicken Enchilada Bake, followed VERY closely by Copycat Trader Joe’s Sea Salt & Turbinado Sugar Dark Chocolate Almonds (opening image).
I thought it would be fun to include one recipe in each monthly “Best Of” post that is from the recipe vault. The recipe I chose for March was a particularly popular one after I submitted it to Finding Vegan and it kind of took of. This is from reallly early on in my blogging career, which I think you can pretty clearly discern from the photo, but these Vegan Vanilla Chai Baked Donuts are a recipe you will definitely want to try out.
I thought it would be fun to also share some bonus recipes at the end of my “Best Of” posts that are almost too simple to dedicate an entire blog post to. I originally got the idea for this detox drink from Sally’s blog, but have learned about a few changes that make this a much more enjoyable drink that I wanted to share with you. This drink has made my skin better and my belly flatter ever since I started drinking it. I dilute it with water and have a cup in the morning and at night. The mixture makes enough servings for about three days if you drink it twice a day and dilute with water.
Some tips: I highly recommend using some kind of flavored drink powder to mask the apple cider vinegar taste. I have been using Designer Whey Protein 2GO in Tropical Orange and it is a game changer. Whisk all the ingredients except the water together first so you get rid of any clumps and then add the water.
- 1/4 cup apple cider vinegar (raw unfiltered is best-Bragg's brand is great)
- 1/2 teaspoon ground ginger
- 1/2 packet powdered drink mix (I use Designer Whey Tropical Orange Protein 2GO)
- juice of 1-2 lemons
- 1/2 teaspoon stevia (or a few drops liquid stevia)
- 1 quart water
- Add all ingredients except water to a cup and whisk to combine completely.
- Mix with water and store in the fridge in a jug or closed bottle.
- When ready to serve, fill a cup halfway with this mixture and dilute with plain water.
