Are you still with me on those New Year’s Resolutions? Of course, I haven’t been as on top of mine as I planned, but I have my reminders up next to my bed and I am making a conscious effort to do the best I can. That’s all we can really ask of ourselves, after all.
If you’ve fallen off the healthy eating wagon a bit, or if you just want to continue on your streak, this smoothie is the perfect quick breakfast or snack. It has only a few ingredients that you probably already have on hand.
Frozen blueberries
Green Tea
Avocado
Mint Leaves
Honey
Vanilla protein powder (optional)
That’s it!
Now, let me explain about the avocado before you get all grossed out. Avocado is a great alternative to banana to thicken a smoothie, and sometimes I just get a little banana-ed out. You can’t taste the avocado at all. I promise! Instead, this is a refreshing smoothie with a distinct mint flavor, a hint of green tea, and of course lots of blueberry.
I’ll admit that I’ve definitely been in a smoothie rut lately, sticking to my 2 or 3 favorite combinations, but this recipe has definitely found a permanent spot on my smoothie list.
What’s your favorite smoothie combination?
- 1 cup frozen blueberries
- 1/2 ripe avocado
- 2 cups green tea, cooled in the fridge if possible
- 2 tablespoons honey
- small handful fresh mint leaves
- 1 cup ice (if tea was warm, double ice)
- (optional) 1-2 scoops vanilla protein powder
- Add all ingredients to a blender and blend until completely smooth.

I have never used an avocado to thicken a smoothie – I am fascinated! I need to try this out pronto! Or as soon as we thaw out a tad. Gorgeous looking smoothie! Awesome photos

I kind of forget about the Polar Vortex like weather up north while I’m here in Oaxaca, but I say smoothies are like ice cream and there is no off season. The avocado is a great switch from a banana and you won’t taste it. I hope you get to try soon, Shashi!

What a beautiful smoothie! I love that you use green tea in it – brilliant! I haven’t fallen off the wagon yet, I am happy to report! Partly because my resolution was to be LESS strict with my diet đŸ™‚ We juice almost daily, though, so that makes up for everything! Thanks for the awesome recipe!!
