I’m always buying tons of bananas and once they get overripe I freeze them for smoothies or vegan banana ice cream. I also use the super ripe bananas in baking, like my Chocolate Chip Banana Oatmeal Pancakes. In addition to the usual suspects like banana bread (healthy nutella banana bread recipe coming soon!), these PB2 Banana Oatmeal Bites are a great way to use up those bananas.
What is your favorite way to use extra ripe bananas?
PB2 Banana Oatmeal Bites
Makes 15 bites.
1 cup rolled oats (gluten free optional)
1 extra ripe banana
2 tablespoons powdered peanut butter (PB2)
2 tablespoons unsweetened shredded coconut
2 tablespoons chia seeds
5 drops stevia liquid extract or 1 packet of truvia
- Add all ingredients to a medium sized bowl and mix thoroughly with a fork. It will seem like the mixture is dry but just keep mixing until the chia seeds and oats soak up the banana.
- Using a tablespoon, scoop out the mixture and roll into bite size balls, packing them tightly in your hands.
- Place on a plate and refrigerate for a few hours before transferring to an airtight container or plastic bag. Store in the fridge and eat within three days.
Substitutions: Flax for chia seeds.
