Ingredients
  • 1 cup green lentils, sorted and rinsed
  • 2 cups water
  • 1 purple onion, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 4 tablespoons extra virgin olive oil
  • 1 packet 25% Less Sodium Old El Paso Taco Seasoning
  • 1 16 oz. jar of Old El Paso Medium Thick N' Chunky Salsa
  • plain greek yogurt, optional to serve
  • tortilla chips, to serve
Instructions
  1. Add lentils and water to a saucepan and bring to a boil. Reduce heat to low, cover with a lid and simmer until tender and the liquid is mostly absorbed (35-40 minutes). Drain any remaining liquid and set aside.
  2. Add onion, garlic and olive oil to a skillet and cook on medium heat until soft. Add lentils and taco seasoning mix and stir to coat the vegetables with the mix.
  3. Cook until hot throughout. Serve with greek yogurt and chips.
