Banana Oatmeal Brulee

Serves: Makes 4 servings.
  • 1 cup + 1/3 rolled oats, gluten free optional
  • 4 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 2 cups unsweetened almond milk
  • 2 ripe bananas, peeled and mashed well
  • 2 teaspoons vanilla extract
  • pinch of salt
  • cooking spray (coconut oil spray recommended)
  • 2 tablespoons white sugar
  1. Add dry ingredients to a medium pot and whisk to combine. Add wet ingredients to the same pot and mix everything well.
  2. Heat over medium heat until oatmeal comes to a boil. Once boiling, continue whisking vigorously for 1-2 minutes, until oatmeal is creamy and hot throughout.
  3. Prepare four ramekins by spraying with cooking oil and divide oatmeal evenly among them. Sprinkle 1/2 tablespoon white sugar on top of eat filled ramekin.
  4. Broil in the oven under high heat for about 5-10 minutes or until lightly brown (watch carefully so it doesn't burn!).
  5. Remove and let cool slightly before serving or store covered in the fridge for up to five days.
