Red, White, and Blue Summer Berry Crisps for One

  • 1 cup fresh blueberries (or frozen)
  • 1/2 cup fresh pitted cherries
  • 1/2 cup quick oats, gluten free optional
  • 1/4 cup buckwheat flour (or other gluten-free flour or white/whole wheat flour)
  • 2 tablespoons brown sugar
  • 1 tablespoon salted butter, chopped
  • 1 teaspoon pure vanilla extract
  • greek yogurt, coconut cream, whipped cream, or ice cream to garnish
  1. Preheat oven to 375 degrees F.
  2. Grease two small ramekins or cast iron pans and fill each evenly with blueberries and cherries.
  3. Add oats, flour, brown sugar, butter and vanilla to a medium bowl and use your hands to incorporate completely, crushing the butter with your fingers.
  4. Sprinkle oat mixture on top of berries and cook in the oven for 30 minutes, or until golden brown. Serve warm with greek yogurt, whipped cream, or ice cream.
You can sub white or whole wheat flour, or oat flour, in place of buckwheat flour.
