Cheddar Tomato Pie

Ingredients
  • 1 and 1/2 cups white flour
  • 3/4 stick of salted butter (6 tablespoons), cold
  • 3 t baking powder
  • 1/2 cup milk (I used unsweetened almond milk but you could use skim or 2%)
  • 2 lbs. fresh tomatoes, peeled, cored and chopped (or two 28 oz cans plum tomatoes)
  • 3 cups grated extra sharp cheddar cheese
  • 1/2 cup chopped fresh basil
Instructions
  1. Preheat oven to 400 degrees F.
  2. Add flour through milk to a bowl or food processor and process (or mix with hands) until mostly combined (it's okay to still have large chunks of butter).
  3. Press crust into a pie dish using your fingers to make an even layer.
  4. Bake for 8 minutes and remove.
  5. Add chopped tomatoes to a large bowl and pour out any excess liquid. Mix with chopped basil and 1 cup grated cheddar.
  6. Fill crust with tomato mixture and cover with remaining 2 cups grated cheddar.
  7. Bake for about 25 minutes or until lightly browned. Serve hot.
Notes
You can also buy a pre-made pie crust.
