Almond Butter Monster Cookie Smores Bars

Serves: Makes 16 squares.
 
Ingredients
  • 4 and 1/2 graham cracker sheets
  • 1/2 cup almond butter
  • 6 tablespoons butter, softened
  • 1/2 cup coconut sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 and 1/2 cups quick oats
  • 1/4 cup M&Ms
  • 1/4cup chocolate chips
  • 1/2 bag of large marshmallows, cut in half
Instructions
  1. Preheat oven to 350 degrees F.
  2. Line an 8x8 inch pan with tin foil and grease the foil. Lay graham cracker cookies flat, covering the entire bottom of the pan.
  3. Add almond butter, butter, and sugar to a bowl and cream using an electric mixer.
  4. Add in egg and vanilla extract and beat until mixed.
  5. Add flour, baking soda, and salt and beat until mixed.
  6. Add in the oats and mix on low until incorporated.
  7. Add M&Ms and chocolate chips and stir to combine.
  8. Spread cookie mixture evenly over the graham crackers.
  9. Bake for 20 minutes, remove, and top with marshmallow halves, cut side down.
  10. Bake for 5-10 minutes more to toast the marshmallows and remove to cool.
  11. Let cool slightly before cutting.
Notes
Possible substitutes: peanut butter for almond butter and light brown sugar for coconut sugar.
