Peanut Butter Protein Snack Mix

Serves: 10 cups
  • 3 cups pretzels
  • 1 cup pecan halves
  • 4 cups air popped popcorn
  • 1 cup dried cranberries
  • 1 cup natural peanut butter
  • 2 tablespoons powdered sugar
  • 1/4 cup (or 1 rounded scoop) vanilla whey protein powder
  1. Combine pretzels, popcorn, pecans, and cranberries in a large bowl.
  2. In a small bowl, microwave peanut butter for about 15 seconds or until warm and softer than normal.
  3. Add peanut butter to pretzel mixture and gently toss to combine. This may take a few minutes and everything may not be completely coated, but do your best.
  4. Into a large zip lock bag, add powdered sugar and protein powder. Close the bag and mix to combine.
  5. Add the pretzel mixture to the zip lock bag, close the bag, and shake to coat completely.
*It will be easier to mix the dry snacks with the peanut butter if the peanut butter is runny in texture.
