Paletas, or popsicles, are a pretty big deal in Mexico. There are two famous chains that sell ice cream and popsicles- La Michoacana and Popeye. Not really sure how Popeye, the spinach loving sailor, turned into a popsicle loving sailor but who am I to judge. Popsicles are tasty.
This is definitely another one of those not so healthy, but oh so delicious and authentic, recipes. I think you could definitely do some swaps with coconut milk and stevia if you wanted to get creative and keep things healthier, but I wanted to go the safe route with sweetened condensed milk for my cream and sweetener.
What did I do with my leftover limes, you ask? Well of course I made Coconut Kiwi Mojitos for my going away party on Friday night. I am now back in Philadelphia and headed to work this morning. More to come on that soon!
LET’S CHAT: Do you have a favorite popsicle flavor?
- 1 cup sweetened condensed milk
- 1 cup skim milk
- 3/4 cup lime juice
- 1 (unpacked) tablespoon lime zest, optional
- Add all ingredients to a medium bowl and whisk to combine completely. Pour equal amounts into popsicle molds or Dixie sized cups. Freeze for 15 minutes and then add popsicle sticks (or sturdy straws). Freeze again overnight or for at least 10 hours. Let thaw for a few minutes before removing and eating!
