Let’s eat dessert for breakfast, shall we? If you enjoyed my Healthy Single Serve Microwave Apple Crumble from a while back, then you are going to LOVE this Microwave Berry Breakfast Crumble. Same idea but with a few changes.
I decided to use butter instead of coconut oil in the crumble mixture because it gives it a more classic texture and flavor, and because I’ve been lovin’ a touch of butter here and there lately. I also used a mixture of frozen blueberries and raspberries instead of apples.
The ground flaxseed mixed with the berries is pretty key. It soaks up some of the liquid and makes the filling have a great “baked in the oven” texture. I haven’t made it without, and I suspect that you could get away with it just fine, but give it a try!
This dish takes about 6 minutes to make, and the topping has a great brown sugar flavor with lots of healthy fiber to keep you full for the whole morning. Served with a side of coffee, this dessert-turned-breakfast is sure to become part of your regular rotation.
- 1 cup frozen blueberries
- ½ cup frozen raspberries
- ½ tablespoon ground flaxseed
- ½ teaspoon stevia
- ¼ teaspoon cinnamon
- 2 tablespoons rolled oats
- 2 tablespoons oat flour
- 1/2 tablespoon unsalted butter
- 1 teaspoon brown sugar
- ¼ teaspoon cinnamon
- pinch of salt
- Microwave frozen berries in a medium bowl for about 30 seconds to soften. Add the remaining fruit ingredients and toss to combine.
- In a separate bowl, combine all the crumble ingredients and using a fork or your fingers crumble the butter into the mixture until it is coarse. Sprinkle the crumble mixture over the berries.
- Microwave for about 1 minute, or until completely hot.
- Let cool slightly before eating.
