Every now and then a girl just needs some chocolate. I, myself, am a huge fan of chocolate pudding, but the stuff at the store is filled with chemicals and either too much sugar or fake sweeteners. I have tried two different kids of healthy chocolate pudding at home: my Chocolate Avocado Pudding, and this beauty here made with a special ingredient…silken tofu. I know it sounds gross (not sure if it sounds more or less gross than avocado in your chocolate pudding), but I promise you would never even know. It actually makes this a dessert or snack that is high in protein.
Chocolate Pudding
Serves 2.
1 package of silken tofu (I like Trader Joe’s Nigari Silken Tofu)
3 tablespoons dark chocolate cocoa powder
2 tablespoons agave or maple syrup
2 teaspoons vanilla extract
1/2 teaspoon salt
Combine all ingredients in a food processor and process until well combined. This may take up to about five minutes until you have no white pieces of tofu left. Place in the refrigerator for at least 30 minutes. Top with shaved chocolate, graham cracker crumbs, chocolate chips, etc.
