I am always in search of healthy meal options. I especially love healthy options that don’t require me to run out to the grocery store to buy a million rare ingredients. This Chickpea & Avocado Open-Faced Sandwich recipe is quick and healthy for lunch or dinner. It uses ingredients that you probably already have on hand and you don’t need any special equipment.
Last week, I did not stick to my usual workout schedule at all. I came home from work feeling tired and lazy, and with too many other things that I needed to get done. Whenever I get out of my workout routine, I find it really hard to get back in. The start of a new week is always a great excuse for me to start over with my work outs. I started this week off right with a trip to the gym for some cardio and strength training. How do you all stick to your workout plans or get back on track?
Chickpea & Avocado Open-Faced Sandwiches
Serves 2.
4 slices of bread
1 can chickpeas, rinsed and drained
1 avocado, pitted and skinned
1/2 cup non-fat plain greek yogurt
4 slices sundried tomato in oil, chopped
4 garlic cloves, smashed
juice of 1 lemon
salt and pepper to taste
handful of fresh spinach
poppy seeds to garnish, optional
Mash chickpeas and avocado flesh in a medium sized bowl. Add yogurt, sundried tomatoes, garlic, lemon, salt, and pepper to the chickpea and avocado mixture and mix until combined. Toast bread and top with fresh spinach leaves. Scoop mixture onto bread. top with poppy seeds.
