As you know, I made sweet cashew cream the other day and I have been eating it in vegan fruit and granola parfaits. I woke up this morning wanting to try a little cashew cream in a smoothie to see if it would give the smoothie a thicker and nuttier texture. It did, but I didn’t add any sweetener to the smoothie, which I would do if I make this again.
Berry and Cashew Cream Smoothie
Makes 1 smoothie.
Frozen berries (I used blueberries and raspberries. If you don’t have frozen berries then add some ice cubes)
1/2 banana
2 teaspoons cashew cream
1/2 cup milk of choice (I used unsweetened almond milk)
1 tablespoon chia seeds (optional)
1 1/2 teaspoon sweetener (agave syrup, maple syrup, honey-not vegan, brown sugar, etc. I didn’t do this but wish I had)
Put all ingredients in a blender, starting with the milk. Blend and add milk as necessary to get a smooth consistency.
