On a recent trip to Portland, Oregon, I had the most amazing vegan parfait that was made with fresh fruit, granola, and sweet cashew cream. I have been thinking abou this parfait ever since and finally got around to trying cashew cream myself. After a little bit of research, I found that some people use savory cashew cream as vegan substitutes for cream based sauces, but I chose to make my cashew cream sweet.
Sweet Cashew Cream
1 cup raw cashews
1/4 cup maple syrup
1 tablespoon vanilla extract
1 teaspoon cinnamon
dash of salt
Cover cashews with water and soak overnight. Rinse and drain cashews and place in food processor. Add the rest of the ingredients and pulse until completely smooth. Refrigerate for up to one week.
Vegan Yogurt Parfait
Fresh fruit of your choice (I used strawberries, bananas, and blueberries)
Coconut Granola
Sweet Cashew Cream
Combine in a bowl or layer like a parfait.
