Homemade graham crackers soar way above store-bought and pair perfectly with marshmallows and chocolate (duh). These s'mores sandwiches are perfect for warm weather bonfires or barbecues.

  • 3/4 cup unsweetened almond milk, room temperature if possible
  • 1/2 cup coconut oil, melted
  • 3 tablespoons honey
  • 2 and 1/2 tablespoons dark molasses
  • 1 teaspoon vanilla extract
S'mores Assembly
  • marshmallows (I used vegan marshmallows)
  • 1/2 cup semi-sweet chocolate chips
  • sprinkles
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Whisk the dry ingredients together in a large bowl. Combine the almond milk, coconut oil, molasses, honey and vanilla extract in a small bowl. Add the wet ingredients to the dry and mix until combined.
  3. Place the dough on a well floured surface (or between two pieces of parchment paper or silicone mats) and roll with a rolling pin until the dough is thin and even. If you want your graham crackers to be soft like a cookie, keep them about 1/4 inch. If you like them crispy, try to roll them a little thinner.
  4. Cut the dough with a sharp knife or pizza cutter into even squares and place on a greased or lined cookie sheet. The crackers can be pretty close to each other since they won't spread much.
  5. Using a fork, poke two sets of marks in the top of each cracker.
  6. Bake for 20 minutes or until golden brown on the edges. Remove from the oven and let cool completely.
  7. Melt your chocolate chips in a bowl on 30 second intervals in the microwave. Mix until completely melted.
  8. For S'mores: Roast marshmallows over a flame (careful not to burn yourself) and smash them between two graham crackers. Dip one edge of the sandwich in melted chocolate and add sprinkles.
  9. You can also enjoy the graham crackers as is or dipped in chocolate without the marshmallow.
  10. Store in an airtight container at room temperature.
Notes
It is important to have the almond milk at room temperature so the coconut oil doesn't solidify when you mix the wet ingredients together. You can slightly warm the almond milk in the microwave if you need to.
