Raspberry Chocolate Chip Whole Wheat Pancakes

Serves: Makes 8 pancakes.
 
Ingredients
  • 1 and 1/2 cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk (I used unsweetened almond milk)
  • 2 tablespoons maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup frozen or fresh raspberries
  • 1/4 cup chocolate chips
  • coconut oil or cooking oil spray
Instructions
  1. Add whole wheat flour, baking powder, baking soda and salt to a medium bowl and whisk to combine.
  2. In a separate bowl, combine milk, maple syrup, egg, and vanilla extract.
  3. Add the wet ingredients to the dry and add the raspberries and chocolate chips. Fold gently until most of the batter is wet but you still want some clumps.
  4. Heat your pan on low and add oil, spoon batter into 8 even pancakes. Once bubbles form and the edges of the pancakes are set, flip and cook for a few minutes on the other side.
  5. Serve immediately with maple syrup!
